  • 1 (1 lb. 4 oz.) can crushed pineapple, undrained
  • 2 Tbsp. cornstarch
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • 1 Tbsp. butter
  • 1 tsp. lemon juice (optional)
  • pastry for 2 crust 8-inch pie

Directions

    Combine pineapple, cornstarch, sugar and salt. Cook until thick and clear, stirring constantly.

    Add butter and lemon juice, if desired.

    Pour into pie shell. Add top crust.

    Bake at 425° for 30 minutes.
