- 1 pie shell
- 2 c. crushed pineapple
- 2 Tbsp. cornstarch
- 1/2 tsp. salt
- 1/2 c. sugar
- 2 egg yolks
- juice of 1 lemon
Directions

1Scald pineapple.

2Mix cornstarch, salt, sugar and stir into pineapple.

3Stir and cook slowly 10 minutes.

4Add lemon juice and beaten egg yolks slowly.

5Cover and let cook 5 minutes.

6Pour into baked pie shell and cover with whipped cream when ready to serve. Good when chilled.
