Pineapple Pork Chops

  • 1 (8 oz.) can unsweetened pineapple slices
  • 2 c. water
  • 1 c. uncooked long grain rice
  • 1/2 c. raisins
  • 4 (1/2-inch thick) pork chops
  • 1/4 tsp. salt
  • 1 medium green pepper, cut into rings
  • 1 small onion, cut into rings and separated
  • 2/3 c. unsweetened orange juice or apple juice
  • 2 tsp. cornstarch
  • 1/4 tsp. curry powder

    Drain pineapple, reserving 1/3 cup juice.

    Set aside.

    Combine water, rice and raisins in a lightly greased 2 1/2-quart shallow casserole dish.

    Cover with heavy-duty plastic wrap.

    Microwave at High for 5 minutes; stir.

    Arrange pork chops over rice; sprinkle with salt.

    Cover and microwave at Medium (50% power) for 10 minutes, giving dish a quarter turn after 5 minutes.
