Pineapple Pound Cake

- 1 c. oil
- 1 2/3 c. sugar
- 6 eggs
- 3 c. all-purpose flour
- pinch of salt
- 1 tsp. baking powder
- 1 tsp. vanilla extract
- 3/4 c. crushed pineapple, undrained
Directions

1Combine oil and sugar.

2Add eggs one at a time, beating well after each addition.

3Combine dry ingredients and add to oil mixture.

4Stir in vanilla and pineapple.

5Pour into a well-greased 10-inch tube pan or 12 cup Bundt pan.

6Set oven temperature to 300° to 325°.

7Bake for 1 hour or until tested done.

8Invert pan and let cool about 10 minutes.

9Remove cake carefully.

10Cool completely.

11Sprinkle 10x powdered sugar on cake before serving, if desired.
