Ingredients

  • 1 cup large diced pineapple
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced red onion
  • 1 diced serrano chile
  • 1 bunch small bunch chopped cilantro
  • 1/4 tsp cumin
  • 1 juice of 1 lime
  • 1 salt and pepper to taste

    Mix all ingredients.

    Refrigerate at least 30 minutes.

    Longer is better, the flavors will combine better.

    You can swap the pineapple for mango it is equally delicious.

    Also, omit or reduce the serrano to your liking.

    I use this to top grilled fish.

    It would also go great on chicken or steak
