  • 1 c. canned, crushed pineapple, drained
  • 1/2 c. red and green bell peppers, seeded and diced
  • 1/2 c. red onions, chopped
  • 1/2 c. poppy seed dressing
  • 2 Tbsp. fresh cilantro, minced
  • 1 Tbsp. lemon juice
  • 1/2 jalapeno pepper, seeded and minced

    In a large glass bowl, mix all ingredients.

    Cover and refrigerate 2 to 3 hours. Serve with fish, chicken, grilled seafood and rice.
