Pineapple Upside-Down Cake

- 1 (8 1/4 oz.) can pineapple tidbits
- 3 Tbsp. butter or margarine
- 1/2 c. packed brown sugar
- 4 maraschino cherries, halved
- 1 pkg. 1 layer size yellow cake mix
Directions

1Drain pineapple; reserve syrup.

2Melt butter.

3Stir in 1 tablespoon reserved syrup.

4Place about 1/2 tablespoon butter mixture in each of eight 6-ounce custard cups.

5Add 1 tablespoon brown sugar to each.

6Arrange pineapple on top sugar.

7Place cherry half in center.

8Prepare cake mix following package directions and using remaining pineapple syrup plus enough water to equal liquid called for on package.

9Spoon about 1/4 cup batter into each cup. Bake at 350° for 25 to 30 minutes.

10Let stand 5 minutes; invert onto plate.

11Makes 8 servings.
