Pineapple Upside-Down Cake

- 1 c. brown sugar
- 3/4 c. pecans, chopped
- 6 to 8 pineapple slices
- 3 Tbsp. butter
- 1 1/2 c. flour
- 1/2 tsp. salt
- 1 1/2 tsp. baking powder
- 1 tsp. vanilla
- 3 eggs, separated
- 1 1/2 c. pineapple juice
Directions

1Place brown sugar and pecans in baking pan, arrange pineapple slices over brown sugar and nuts.

2Dot with butter.

3Sift together the flour, salt and baking powder.

4Beat egg yolks and white sugar until fluffy.

5Stir in flour mixture, vanilla and pineapple juice alternately.

6Fold in beaten egg whites, pour over mixture in baking pan.

7Bake at 350° for 30 minutes.

8Leave in pan a few minutes; turn upside down.
