Pineapple Upside-Down Cake

  • 1 yellow cake mix
  • 3 eggs
  • 1/4 c. oil
  • 24 oz. sliced pineapple (reserve liquid)
  • 1 stick butter
  • 1 c. brown sugar
  • 1 1/4 c. pineapple juice

Directions

    Mix cake mix, eggs, oil and pineapple juice on high speed for 2 to 3 minutes.

    In greased 9 x 13-inch pan, place pineapple rings on bottom and sides.

    Cut butter in slices; place on pineapple.

    Mix pineapple liquid with brown sugar.

    Pour over pineapple in pan. Pour cake mixture over pineapple.

    Place in 350° preheated oven. Bake for 35 to 45 minutes until golden brown and will spring back with light touch.
