Pineapple Upside-Down Cake

- 1 yellow cake mix
- 3 eggs
- 1/4 c. oil
- 24 oz. sliced pineapple (reserve liquid)
- 1 stick butter
- 1 c. brown sugar
- 1 1/4 c. pineapple juice
Directions

1Mix cake mix, eggs, oil and pineapple juice on high speed for 2 to 3 minutes.

2In greased 9 x 13-inch pan, place pineapple rings on bottom and sides.

3Cut butter in slices; place on pineapple.

4Mix pineapple liquid with brown sugar.

5Pour over pineapple in pan. Pour cake mixture over pineapple.

6Place in 350° preheated oven. Bake for 35 to 45 minutes until golden brown and will spring back with light touch.
