Pineapple Whole Wheat Rolls

  • 8 oz. crushed pineapple
  • 1/3 c. reserved pineapple juice
  • 1 c. white flour
  • 1 pkg. yeast
  • 1/3 c. milk
  • 3 Tbsp. brown sugar
  • 3 Tbsp. oil
  • 1/4 tsp. salt
  • 2 to 2 1/4 c. whole wheat flour

    Drain pineapple and combine the reserved juice with the milk; heat adding brown sugar, oil and salt just until warm.

    Combine the white flour and yeast in a bowl and add the liquid.

    Beat this for 3 minutes on high speed.

    By hand, add pineapple and stir in rest of whole wheat flour.

    Turn onto a board and knead on floured surface, then place in greased bowl; cover and let rise to double and punch down.

    Rest it 10 minutes, then divide in desired roll shape.

    This one suggested dividing into 1/3 and make 15 small balls placing 3 to a muffin cup; let rise until almost double in size.

    Then bake in 375° for 15 minutes.

    Brush with combined honey and butter.
