- 2 c. sugar
- 3 eggs
- 1 c. oil
- 2 tsp. vanilla
- 3 c. zucchini, grated
- 1 c. crushed pineapple, drained
- 1 c. coconut
- 1 c. golden raisins
- 1 1/2 c. pecans, chopped
- 3 c. flour
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
Directions

1Beat together sugar and eggs.

2Blend in oil and vanilla.

3Stir in zucchini and pineapple.

4Mix coconut, raisins and pecans.

5Stir together flour, cinnamon, baking soda, baking powder and salt. Stir coconut mixture into flour mixture.

6Stir all into batter. Grease and flour two bread pans.

7Divide mixture between pans. Bake at 350° for 60 to 65 minutes.
