  • 1 c. oil
  • 2 c. sugar
  • 2 tsp. vanilla
  • 2 c. shredded zucchini
  • 1 (8 1/4 oz.) can crushed pineapple, well drained
  • 3 c. flour
  • 2 tsp. baking soda
  • 1 1/4 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 3/4 tsp. nutmeg
  • 1 c. raisins
  • 1 c. chopped nuts

Directions

    Beat eggs, oil, sugar and vanilla until thick.

    Stir in remaining ingredients; blend well.

    Makes two 9 x 5 x 2 3/4-inch loaves.

    Bake for 60 minutes at 350°.

    Or makes three 7 1/2 x 3 1/3 x 2 1/4-inch loaves.
