- 1 c. oil
- 2 c. sugar
- 2 tsp. vanilla
- 2 c. shredded zucchini
- 1 (8 1/4 oz.) can crushed pineapple, well drained
- 3 c. flour
- 2 tsp. baking soda
- 1 1/4 tsp. baking powder
- 1 tsp. salt
- 1 1/2 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1 c. raisins
- 1 c. chopped nuts
Directions

1Beat eggs, oil, sugar and vanilla until thick.

2Stir in remaining ingredients; blend well.

3Makes two 9 x 5 x 2 3/4-inch loaves.

4Bake for 60 minutes at 350°.

5Or makes three 7 1/2 x 3 1/3 x 2 1/4-inch loaves.

6Bake for 50 minutes at 350°.
