  • 3 eggs
  • 2 c. sugar
  • 2 tsp. vanilla
  • 1 c. oil
  • 2 c. peeled zucchini, grated
  • 3 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 can pineapple, drained

Directions

    Beat eggs, sugar, vanilla and oil until fluffy.

    Add zucchini, flour, soda and baking powder until well mixed.

    Put in greased and floured 9 x 13-inch pan.

    Bake at 325° for 50 to 55 minutes, until toothpick inserted comes out clean.
