- 1 large ham hock or 1 lb. bacon
- 13 oz. can tomato paste
- finely cut onion
- salt and pepper to taste
Directions

1Soak beans overnight in cold water.

2Next day, add ham or bacon, onion, salt and pepper.

3Cook until done (about 2 hours), adding more water if beans become dry.

4Keep beans barely covered with water while cooking.

5After beans are done, add tomato paste and if necessary, more salt.
