Ingredients

  • 1 c. Minute rice, cooked in 1 qt. water, drain and cool
  • 2 (3 oz.) pkg. strawberry Jell-O
  • 1 1/2 c. hot water
  • 1/2 c. sugar
  • 1 (No. 303) can crushed pineapple, drained
  • 1/2 c. pineapple juice
  • 1 carton Cool Whip

Directions

    Dissolve Jell-O in 1 1/2 cups hot water, stirring until dissolved.

    Add sugar and juice.

    Let set until slightly jelled. Add remaining ingredients and fold in Cool Whip.

    Refrigerate until firm.
