Pinto Bean Casserole

Ingredients
- 2 tsp. corn oil or Crisco
- 1 c. chopped onion
- 1 c. chopped green pepper
- 2 lb. ground beef
- 2 large cans Luck's pinto beans
- 1 (15 oz.) can tomato sauce
- 1 tsp. hot sauce (optional)
- 1 pkg. Jiffy cornbread mix
Directions

1Place oil, onions and green pepper in frying pan to saute. Salt and pepper to taste.

2Take out of pan and place in a large bowl.

3Put ground beef in frying pan and brown; drain.

4Put this into the bowl.

5Add Luck's pinto beans (throw away the fat) and the tomato sauce to the bowl.

6Add hot sauce if desired.

7Let stand for 30 minutes.

8Place in casserole dish.

9Mix the Jiffy mix according to directions and pour on top of casserole.

10Bake at 400° until brown, about 20 minutes.
