Pinto Bean Pie

  • 1/2 c. pinto beans, drained
  • 1 1/2 c. sugar (white)
  • 1 stick margarine
  • 1/2 c. coconut
  • 2 eggs, well beaten
  • 1 tsp. vanilla

Directions

    Drain and mash beans; set aside.

    Combine sugar and margarine; mix well.

    Add the beans, coconut and vanilla.

    Add beaten eggs to mixture.

    Pour in 9-inch pie shell.

    Bake at 350° for 1 hour. This makes one pie, but one can of pinto beans and one can of coconut makes three pies.

    All you do is double the mixture.
