- 1/2 c. pinto beans, drained
- 1 1/2 c. sugar (white)
- 1 stick margarine
- 1/2 c. coconut
- 2 eggs, well beaten
- 1 tsp. vanilla
Directions

1Drain and mash beans; set aside.

2Combine sugar and margarine; mix well.

3Add the beans, coconut and vanilla.

4Add beaten eggs to mixture.

5Pour in 9-inch pie shell.

6Bake at 350° for 1 hour. This makes one pie, but one can of pinto beans and one can of coconut makes three pies.

7All you do is double the mixture.
