  • 1 can plain pinto beans
  • 4 eggs
  • 2 tsp. vanilla
  • 1 1/2 c. pecans or walnuts, chopped
  • 2 1/2 c. sugar
  • 2 sticks melted butter
  • 1 1/2 c. flaked coconut
  • 3 unbaked 9-inch pie shells

Directions

    Blend beans and juice in a food processor until smooth.

    In a separate bowl, mix sugar, eggs, melted butter and vanilla.

    Add blended beans, coconut and nuts.

    Pour into the unbaked pie shells. Bake at 300° for 1 hour.

    Yields 3 pies.
