Pinto Bean Pie

Ingredients

  • 1 c. cooked beans, drained (or 3/4 c.)
  • 1 c. brown sugar
  • 1 c. coconut
  • 2 eggs
  • 1/2 c. melted margarine
  • 1 tsp. vanilla

Directions

    Mash 1/2 cup beans until smooth.

    Stir in sugar, coconut and margarine.

    Blend in eggs, stir in other 1/2 cup beans and pour into pie shell.

    Bake 35 minutes at 325° or until done.

    Can use walnuts or pecans instead of beans.
