- 16 oz. Ricotta cheese
- 1/2 c. Parmesan cheese
- 2 Tbsp. minced onion
- 2 (10 oz.) pkg. frozen spinach, thawed and drained
- 2 (9-inch) pie crusts
- 3 eggs
- 2 Tbsp. flour
- 6 oz. Mozzarella cheese, shredded
Directions

1Beat 2 of the eggs and Ricotta cheese until blended.

2Stir in rest of the ingredients except the last egg.

3Fill pie crust.

4Top with other crust.

5Brush top crust with egg and prick vent holes. Bake below center rack at 425° for 15 minutes.

6Continue baking at 350° for 35 to 40 minutes.

7Let stand for 10 minutes before serving.
