Pinto Bean Pie

  • 1 c. cooked, mashed pinto beans
  • 1/2 tsp. salt
  • 1 c. brown sugar
  • 1 c. granulated sugar
  • 3 eggs
  • 1 stick margarine, softened
  • 1 tsp. vanilla

Directions

    Cook pinto beans until tender with 1 teaspoon salt.

    Mash beans and mix all ingredients together.

    Pour into unbaked pie shell. Bake at 350° for 35 minutes, then at 300° for 20 to 25 minutes. Shield crust with aluminum foil first 35 minutes.

    Decorate with pecan halves, if desired.
