  • 1 (16 oz.) can unseasoned pinto beans
  • 3 c. sugar
  • 4 eggs
  • 1 1/2 sticks margarine, melted
  • 1 1/2 c. coconut
  • 3 c. chopped pecans
  • 1 Tbsp. vanilla flavoring

Directions

    Mash pinto beans; add sugar.

    Beat eggs and add to mixture. Add coconut, vanilla and pecans; mix well.

    Pour into 3 unbaked pie crusts and bake in preheated oven 45 minutes to 1 hour at 300°.

    These pies freeze well.
