Pineapple Pound Cake

  • 1 c. margarine
  • 3/4 c. shortening (Crisco)
  • 2 3/4 c. sugar
  • 3 c. plain flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 6 eggs
  • 1/4 c. milk
  • 2 tsp. vanilla
  • 2 Tbsp. lemon juice
  • 1/2 can crushed pineapple, undrained (15 1/4 oz.)

Directions

    Cream margarine, Crisco and sugar.

    Add eggs.

    Then alternate flour and remaining ingredients.

    Beat with mixer for 5 minutes. Add pineapple and stir with spoon.

    Do not beat pineapple in. Bake at 325° for 1 1/2 hours or 10 minutes longer if not done. Bake in tube pan.
