Pinto Beans Casserole

  • 2 1/2 c. (600 ml) boiling salted water
  • 1 c. (240 ml) yellow corn meal
  • 2 (15 oz.) cans Lucks pinto beans with onions
  • 1/3 c. chopped pitted ripe olives
  • 1 tsp. garlic salt
  • 1/2 tsp. Tabasco sauce
  • 2 Tbsp. grated Parmesan cheese

    Gradually pour cornmeal into boiling water, stirring constantly until thickened, about 3 minutes.

    Combine pinto beans with onions, olives, garlic salt and Tabasco sauce.

    Pour mixture into a 2-quart oblong baking dish.

    Spread cornmeal on top. Sprinkle with grated cheese.

    Bake at 350° for 45 minutes.
