- 2 cups salmon
- 1 small leeks
- 1 each sweet red bell peppers
- 1 cup corn
- 1/2 cup milk
- 3 cups potatoes cooked
Directions

1Pre-heat the oven.

2Drain the can of salmon and reserve the juice.

3Set aside.

4Melt the butter in a pan and cook the leeks and pepper until soft.

5Add the sweetcorn and flour, mix well.

6Cook for 1 minute.

7Blend the salmon juice into the vegetables and flour.

8Mix well then gradually add the milk, beating to make a smooth sauce.

9Flake the salmon into the vegetables and season to taste, Mash together the potatoes and cheese until smooth.

10Put the salmon into an ovenproof dish and spread the chosen sauce over this.

11Pipe or spoon the potato over and bake for 30 minutes Serve with peas, sweetcorn and tomatoes.
