Ingredients

  • 1/3 cup olive oil
  • 1/4 cup cilantro, leaves picked, plus more leaves, to serve
  • 1/4 cup parsley, leaves picked
  • None None Juice and grated zest of 1 lemon
  • 8 None red chilies
  • 4 None garlic cloves, roughly chopped
  • 1/2 inch piece ginger, peeled and roughly chopped
  • 1 lb large raw shrimp, peeled, heads and tails intact
  • 8 None soaked bamboo skewers
  • None None Lemon wedges, to serve

Directions

    In a food processor, combine oil, herbs, zest, juice, chilies, garlic, and ginger. Process to a smooth paste. Season to taste.

    In a medium bowl, combine 1/4 of the paste with shrimp. Place the remaining paste in a serving bowl. Marinate shrimp for at least 30 minutes.

    Thread 3-4 prawns onto 2 skewers (through head and tail), so you can use skewers as handles to turn shrimp.

    Heat an oiled outdoor grill or indoor grill pan to medium. Cook shrimp 2-3 minutes each side, until just cooked through. Serve scattered with more cilantro. Accompany with remaining sauce and lemon wedges.
