Pisco Sour

  • 2 ounces Quebranta pisco
  • 1 ounce lime juice
  • 1 ounce simple syrup
  • 1 ounce pasteurized egg whites
  • 2 drops Chuncho bitters or Angostura bitters
  • Key lime or regular lime, halved

Directions

    In a cocktail shaker, combine pisco, lime juice, simple syrup, and egg whites. Add 3 or 4 ice cubes, then shake vigorously for about a minute.

    Strain into a chilled rocks glass (or martini glass), then add bitters.

    Squeeze in half a lime, then drop it into the glass.
