Ingredients

  • 1 tsp. basil
  • 4 cloves garlic
  • 1/4 c. olive oil
  • 2 large ripe tomatoes, peeled and coarsely chopped
  • 1 lb. green beans, cut in 1 inch lengths
  • 3 medium potatoes, cut in 1/2 inch cubes
  • 2 qt. water
  • 1 Tbsp. salt
  • 1/4 tsp. pepper
  • 1/4 lb. vermicelli, broken
  • 3/4 c. shredded cheese (Swiss or Cheddar)

Directions

    In a soup tureen or large deep bowl (at least 3-quart) from which you serve the soup mix the first three ingredients.

    Stir mixture well so oil coats basil.

    Cover and let stand while you prepare the soup.
