Pizza Rice Casserole

  • 2/3 c. dry rice, cooked
  • 1 lb. ground beef
  • 2 c. tomato sauce
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1/4 tsp. oregano
  • 1 tsp. parsley flakes
  • 1 1/2 c. cottage cheese or Ricotta
  • 1/2 c. grated cheese for topping

Directions

    Simmer browned ground beef, tomato sauce, sugar, salt, oregano and parsley flakes.

    Mix cooked rice with the cottage cheese.

    Put this layer of rice/cheese mixture in greased pan. Cover with thin layer of meat sauce and another thin layer of rice/cheese.

    Alternate layers, ending with meat sauce layer.

    Top with 1/2 cup grated cheese.

    Bake at 325° for about 30 minutes or in microwave on High for 6 minutes.
