- 1 lb. Italian sausage
- 1 lb. Grade A Ricotta cheese
- 1 lb. Mozzarella cheese, diced
- 4 eggs
- 2 oz. diced ham, salami, Prosciutto or pepperoni
- 1 Tbsp. parsley
- pepper to taste
- 1/2 c. sugar (optional)
Directions

1Cook sausage (remove casing) and remove fat particles.

2Mix Ricotta and Mozzarella together.

3Add sausage, ham, eggs, sugar and parsley.

4Blend all ingredients.

5Place in uncooked pastry shell.

6Cover with crust.

7Make slits to allow steam to escape. Bake 40 to 50 minutes at 350° to 375° in a hot oven.
