1Remove any pumpkin membrane from seeds and rinse the seeds well. Make a brine of water and salt, about a six to one concentration and add seeds. Let soak overnight.

2Preheat oven to 225°.

3Drain and roast the seeds on a cookie sheet about 1 hour, stirring several times, until the seeds are dried and salty white.
