Plain Rhubarb Pie

  • 3 c. unpeeled rhubarb, cut into small pieces
  • 1 1/2 c. sugar
  • 1 egg
  • 2 1/2 Tbsp. flour
  • 1 1/2 Tbsp. butter

Directions

    Beat egg; add sugar, flour and rhubarb.

    Spread over lower crust of 9-inch pie crust.

    Dot with butter.

    Put on top crust and bake in a 450° oven for 15 minutes.

    Reduce heat to 350° for about another 25 or 30 minutes.
