- 2 tablespoons oil
- 4 large baking potatoes
- salt & freshly ground black pepper
- paprika
- freshly grated parmesan cheese
Directions

1Scrub potatoes well.

2Cut, lengthwise into 3/8 inch thick slices.

3Preheat oven to 375 degrees.

4Into a large rimmed baking sheet, such as a jelly roll pan, spread the oil.

5Place potato slices in a single layer and turn each one to coat with the oil.

6Sprinkle with salt, pepper and paprika.

7Bake until tender yet crisp.

8About 20 minutes.

9Top with grated cheese and bake about 3 more minutes until cheese is melted.
