Planked Lamb Chops

- 8 ( 1-inch-thick) lamb rib chops
- 1/4 cup butter or margarine
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 cups mashed potatoes
- 1 (10 1/2-ounce) can asparagus spears, drained
Directions

1Saute chops in butter in a large skillet over medium heat 8 minutes on each side or until browned. Sprinkle chops on both sides with salt and pepper.

2Place chops around edges of a large ovenproof platter. Spoon potatoes into center of platter; garnish with asparagus.

3Place platter 5 to 6 inches from heating element. Broil chops and vegetables for 10 minutes or until potatoes are lightly browned.
