- 4 eggs, separated
- 2 cups corn kernels (canned, chopped fine)
- 12 teaspoon salt
- pepper
- 12 cup light cream
- 2 tablespoons butter
Directions

1Beat egg yolks until thick and lemon coloured; add corn, seasonings, and cream.

2Fold in stiffly beaten egg whites.

3Melt butter in frying pan; pour in 1/4 of the egg mixture.

4Cook slowly over low heat.

5When omelet is brown on the bottom, place in a moderate oven (180C) and bake 10-15 minutes or until firm on top.

6Remove from oven, fold, and serve immediately.
