- 3 c. beef broth
- 3 carrots, pared and chopped
- 3 stalks celery, chopped
- 3 Tbsp. Crisco
- 3 Tbsp. all-purpose flour
- 3 c. milk
- 1/2 c. finely shredded Cheddar cheese
- 1/3 c. chopped onion
Directions

1Combine broth, carrots, celery, and onion in a saucepan. Bring to a boil then reduce heat and simmer for 30 minutes or until vegetables are tender.

2Strain; reserve broth and vegetables separately.

3Melt Crisco in a saucepan.

4Blend in flour until it bubbles.

5Add milk slowly, stirring constantly.

6Bring to a boil for 2 minutes.

7Combine broth and white sauce; simmer 20 minutes. Add cheese and garnish with reserved vegetables.
