Plum Cake

  • 1 cup FLOUR
  • 1/2 cup SUGAR
  • 1 tsp BAKING POWDER
  • pinch of SALT
  • 1/2 cup room temperature BUTTER
  • 1 Egg (room temperature)
  • 1 tbsp of MILK
  • 1 tsp VANILLA
  • 4-5 tsp SUGAR
  • PLUMS halved (as many as you want)

Directions

    Mix flour, sugar, baking powder and salt in LARGE bowl.

    Add butter in pieces. Mix with a fork (looks like pastery dough).

    In seperate bowl, blend egg, milk and vanilla.

    Add wet to dry ingredients.

    Press into a 9x10 pan, place your plums (or other fruit), sprinkle with sugar and bake at 375 for 45 minutes.
