  • 1 stick butter softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 3 medium eggs
  • 1/3 cup cornstarch
  • 3/4 cup all purpose flour
  • 1 teaspoon baking powder
  • 4 plums pit removed, chopped
  • 1 2/3 cups confectioners sugar
  • 1 lemon

    Preheat oven to 350°F. In a bowl, beat together the butter, sugar, vanilla, and a pinch of salt until creamy. Stir in the eggs one at a time then fold in the cornstarch, flour, and baking powder.

    Line a muffin tray and divide the chopped plums between the holes. Top with the muffin mix and bake for about 25 minutes. Remove from the oven and cool on a wire rack.

    Mix the confectioners' sugar with some lemon juice until a thick pouring consistency and spread on top of the muffins. Decorate with lemon zest and serve.
