- 1 stick butter softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 3 medium eggs
- 1/3 cup cornstarch
- 3/4 cup all purpose flour
- 1 teaspoon baking powder
- 4 plums pit removed, chopped
- 1 2/3 cups confectioners sugar
- 1 lemon
Directions

1Preheat oven to 350°F. In a bowl, beat together the butter, sugar, vanilla, and a pinch of salt until creamy. Stir in the eggs one at a time then fold in the cornstarch, flour, and baking powder.

2Line a muffin tray and divide the chopped plums between the holes. Top with the muffin mix and bake for about 25 minutes. Remove from the oven and cool on a wire rack.

3Mix the confectioners' sugar with some lemon juice until a thick pouring consistency and spread on top of the muffins. Decorate with lemon zest and serve.
