- 500 g ripe plums
- 2 egg yolks
- 40 g sugar
- 3 -4 drops vanilla extract
- 4 tablespoons orange juice
Directions

1Slice plums and divide between 4 dessert dishes or small bowls.

2Put egg yolks, sugar, vanilla extract and orange juice in a bowl over a pan of simmering water.

3Whisk vigorously (or use an electric mixer) until mixute leaves a 'trail' when dragging whisk through it.

4Spoon the sabayon (egg and sugar mixture) over the plums and serve.
