Plum Sabayon

Ingredients

  • 500 g ripe plums
  • 2 egg yolks
  • 40 g sugar
  • 3 -4 drops vanilla extract
  • 4 tablespoons orange juice

Directions

    Slice plums and divide between 4 dessert dishes or small bowls.

    Put egg yolks, sugar, vanilla extract and orange juice in a bowl over a pan of simmering water.

    Whisk vigorously (or use an electric mixer) until mixute leaves a 'trail' when dragging whisk through it.

    Spoon the sabayon (egg and sugar mixture) over the plums and serve.
