Plum Tomato Soup

- 1 lb. fresh plum tomatoes, coarsely chopped (about 3 c.)
- 1 (14 oz.) can whole plum tomatoes with their juice
- 1/2 tsp. baking soda
- 1 c. chicken broth
- 1 Tbsp. tomato paste
- 2 Tbsp. or more fresh basil or 3/4 Tbsp. dried basil
- 1 tsp. sugar
- 2 medium leeks (white part only), washed and finely chopped (about 2 c.) or 2 c. finely chopped onion
Directions

1In a 2-quart saucepan, combine the fresh and canned tomatoes with their juice; bring to a boil over medium-high heat.

2Add the baking soda; cook, stirring, for 1 minute.

3Stir in the chicken broth, tomato paste, basil, sugar and leeks.

4Reduce the heat to medium-low.

5Cover and simmer for 1 hour.

6Serve hot.
