- 12 ounces center-cut wild salmon
- 2 quarts olive oil
- Salt and freshly ground black pepper
- 1 sprig thyme
- 1 clove garlic
- Fleur de sel
- 1 cup micro greens
Directions

1Cut salmon into 4 (3-ounce) portions.

2Heat olive oil to 95 degrees F. Add thyme and garlic.

3Season the salmon with salt and pepper.

4Place in olive oil for 8 minutes.

5Remove from olive oil.

6Season with fleur de sel.
