- 6 pieces Poblano chilis
- 2 tablespoons butter unsalted
- 1/4 cup onion white
- 1 clove garlic
- 3 tablespoons flour
- 2 cups 2% milk
- 1/4 cup crema
Directions

1Saute onion for 2 minutes, saute garlic 30 sections, add flour, whisk for 1 minute.

2Add milk and bring to a boil, reduce heat and whisk for 5 minutes.

3remove from heat, let cool.

4Add salt and pepper

5roast poblano chilis in 400 degree oven for 25-30 minutes. Place in glass bowl and cover in plastic, for 10 minutes.

6Peel the poblano chilis, stem and seed. Add to blender with flour mixture. Add crema at the same time.
