  • 2 1/2 c. finely crushed zwieback crumbs (dry toast; if you get the toast with cinnamon, omit the 1 teaspoon cinnamon)
  • 1 1/2 c. sugar
  • 1 tsp. cinnamon
  • 1/2 c. melted butter
  • 4 eggs
  • 1/8 tsp. salt
  • 1 1/2 Tbsp. lemon juice
  • 1 1/2 tsp. lemon rind
  • 1 c. whipping cream
  • 1 1/2 lb. Ricotta cheese
  • 4 Tbsp. flour
  • 1/4 c. chopped nuts

Directions

    Mix crumbs with 1/2 cup sugar, cinnamon and melted butter. Reserve 3/4 cup of mixture for topping.

    Press remainder into a 9-inch spring-form pan or a 9 x 13-inch cake pan, lining bottom and sides.
