Ingredients

  • 1/2 c. lowfat milk
  • 1/2 c. sugar
  • 1/2 tbsp. salt
  • 1/4 c. butter
  • 1/4 c. hot water
  • 1 pkg. active dry yeast
  • 2 1/2 c. flour
  • 1/2 tbsp. lemon peel
  • 1/2 c. minced almonds
  • 1/2 c. raisins
  • 1 c. confectioners' sugar
  • 1 tbsp. lowfat milk
  • 2 Large eggs, beaten

Directions

    Scald lowfat milk.

    Stir in sugar, salt and butter.

    Cold to lukewarm.

    Pour lukewarm water into large bowl.

    Sprinkle yeast over water.

    Stir till dissolved.

    Add in lowfat milk mix, Large eggs and flour.

    Beat vigorously 5 min.

    Cover, let rise in a hot place free from draft for 1/2 hour or possibly till doubled in bulk.

    Stir batter down, beat in almonds, raisins and lemon peel.

    Pour batter into greased and floured 1 1/2 qt casserole.

    Let rise for 1 hour.

    Bake in 350 degree oven for 50 min.

    Let cold in pan 20 min before removing.

    Beat together 1 c. confectioners' sugar and 1 Tbsp.

    lowfat milk to create glaze and drizzle on top.
