- 6 chicken breasts
- 1 small chopped onion
- 1/2 c. flour
- 2 c. chicken broth
- 2 crushed garlic cloves
- 3 c. steamed rice
- 12 corn tortillas
- 2 Tbsp. chili powder
- 2 c. shredded low-fat cheese
Directions

1Preheat oven to 350°.

2Stew chicken; bone it and set aside. Skim fat from chicken broth and use broth to make chili.

3Brown flour in skillet.

4Add chili powder and stir in broth; simmer, stirring, for 10 minutes, until thicken.

5Place corn tortillas, one at a time, in boiling water for 5 to 10 seconds to soften. Layer corn tortillas, chicken, rice, onion and cheese.

6Cover with chili; garnish with additional cheese.

7Bake for 20 minutes. Serves 8.
