- 1 cake yeast
- 1 pt. milk (scalded and cooled)
- about 7 c. flour
- 4 yolks and 1 whole egg
- 1/2 c. sugar
- 1/2 tsp. vanilla
- grated rind of 1/8 orange or lemon
- 1 tsp. salt
- 1/4 lb. butter
Directions

1Dissolve yeast in lukewarm milk.

2Add 2 cups flour, let stand in warm place 30 minutes.

3Beat eggs, sugar, vanilla, grated rind of orange or lemon and scant teaspoon of salt until light.

4Add this to the sponge.

5Melt butter and add this to the sponge.

6Add 5 cups flour, cover and allow to rise for about one hour or until double in bulk.

7When light, turn on floured board and pat with hands until dough is one-half an inch in thickness.

8Cut with doughnut cutter, cover and let rise again until light.

9Drop in deep hot fat and fry until done.
