- 5 lb. chicken, disjointed and cut up
- 3 large onions, sliced
- 3 c. bean sprouts
- 2 c. bamboo shoots
- 2 c. crushed pineapple
- soy sauce to taste
- 1 c. sherry (optional)
- 1/2 c. cornstarch
- oil (for sauteing)
Directions

1Fry chicken pieces in oil until brown.

2Saute onions in same pan; add sherry (or other liquid).

3Stir, scraping brown bits loose and blending into liquid to combine with chicken in pan.

4Add crushed pineapple and water or stock and braise 25 minutes.

5Add bean sprouts and bamboo shoots.

6Thicken with cornstarch.

7Serves 20.
