  • FOR THE SALAD:
  • 4 cups Mixed Salad Greens
  • 2 cups Cabbage, Shredded
  • 2/3 cups Sweet Bell Pepper, Diced
  • 4 Tablespoons Red Onion, Diced
  • 2/3 cups Jicama, Peeled, Diced
  • 2/3 cups Snap Peas, Diced
  • 2/3 cups Mango, Peeled, Diced
  • 2/3 cups Cucumber, Diced
  • 8 ounces, weight Cooked And Diced Boneless, Skinless Chicken
  • FOR THE DRESSING:
  • 1/4 cups Freshly Squeezed Orange Juice
  • 1/4 cups Diced Pineapple
  • 1/4 cups Rice Vinegar
  • 1 teaspoon Garlic, Minced
  • 1 teaspoon Dijon Mustard

    In a blender add all the ingredients for the dressing and process until smooth.
