Ingredients

  • 3 c. cooked, cubed turkey
  • 2 stalks celery, sliced thin
  • 1 tsp. curry
  • 1/4 tsp. salt
  • 3/4 c. mayo
  • 2 Tbsp. chopped chutney (optional)
  • 2 c. (15 1/2 oz. can) pineapple chunks, drained
  • 1 banana, sliced
  • 1/2 c. salted peanuts or cashews
  • 1/2 c. coconut
  • 11 oz. can mandarin oranges, drained

Directions

    In a large bowl, combine first 7 ingredients.

    Toss lightly. Cover and chill at least 2 hours.

    Before serving, slice banana. Add to turkey mixture with nuts.

    Serve in lettuce cups.

    Garnish with coconut and oranges.
