- 3 c. cooked, cubed turkey
- 2 stalks celery, sliced thin
- 1 tsp. curry
- 1/4 tsp. salt
- 3/4 c. mayo
- 2 Tbsp. chopped chutney (optional)
- 2 c. (15 1/2 oz. can) pineapple chunks, drained
- 1 banana, sliced
- 1/2 c. salted peanuts or cashews
- 1/2 c. coconut
- 11 oz. can mandarin oranges, drained
Directions

1In a large bowl, combine first 7 ingredients.

2Toss lightly. Cover and chill at least 2 hours.

3Before serving, slice banana. Add to turkey mixture with nuts.

4Serve in lettuce cups.

5Garnish with coconut and oranges.
