  • 2 green peppers, cut in strips
  • 2 Tbsp. butter
  • 1 (1 lb.) can pineapple tidbits
  • 1 envelope gravy mix for turkey
  • 2 Tbsp. sugar
  • 1 Tbsp. vinegar
  • 2 c. diced, cooked turkey
  • 2 Tbsp. chopped pimento
  • cooked rice

Directions

    Cook green pepper in butter until tender.

    Drain juice from pineapple; add water to make one cup.

    Stir contents of envelope of gravy mix into skillet.

    Add pineapple juice, sugar, vinegar, turkey and pimento.

    Heat to boiling.

    Serve on cooked rice. Makes 4 servings.
